Peeling Potatoes: A new day on the horizon

I like to cook; I hate to peel, or chop, or mince. I want a prep cook. No one has volunteered, but this THIS might just change my life.

i did. not sure i did it right.
it was mushy...and messy... but it worked. did i perhaps boil them too long? hmmm...not retiring the old peeler just yet...

Looks like a great idea. You keep most of the vitamins/minerals from cooking with skin on but don't have to deal with peeling little chunks after they're boiled (which I ususally do for potato salad - maybe that's why I don't make it so often). And my kids don't like to eat potato skins anyway. I'll have to try it. Angela's comment is informative.

J & M did have sleep issues when they were toddlers. They had started sleeping through the night pretty young, but around the time they started walking they started waking in the middle of the night again. Wish I could offer you advice based on our experience, but honestly I was too sleep deprived to remember much from those days! Maybe it gives you hope to know that they don't have sleep problems any more, except that J is still a very early riser.

FWIW, I think it wouldn't hurt for you to call Anna Buck to see if she might be able to help. And her new office is REALLY close to your house.
